A few weeks ago I posted “7 Days of Lunches” which was an account of what Little Lady ate for lunch over a 7 day period . I received a huge amount of positive feedback and people seemed to be really interested in what she ate on a daily basis. As it was so popular I decided to record her week’s lunches again and ingeniously (!!!) named it “7 Days of Lunches Part 2”. I hope you find it as useful and enjoyable as Part 1!
Day 1:

Melted Cheese and Tomato Wrap with Peas:
Day 3:
Penne Pasta with Pepper, Carrot and Tomato Sauce (recipe below):
(Makes about 4-5 baby / toddler sized portions)
1/2 Red Pepper
1/2 Orange Pepper
1 small carrot
200g tinned tomatoes or passata
2 tbsp tomato puree
1/2 small onion
Chop all the vegetables finely (making sure the carrot is cut very very small) then fry the onion in some olive oil until soft and translucent. Add all the other vegetables and fry until they all are starting to become soft. Add the tomato puree and the tinned tomatoes / passata then reduce the heat and leave to cook for a further 10-15 minutes. Either serve as is or puree. Can be frozen in individual portions.

Easy Butternut Risotto Cakes with Peas:

Creamy Rainbow Couscous with Flaked Cod (recipe below):
(Makes 1 – 2 baby sized portions)
2 cherry tomatoes
1 broccoli floret (fresh or frozen)
1 small handful of sweetcorn (tinned or frozen)
1/4 carrot chopped very small
2 tbsp cream cheese
1 small skinless and boneless cod fillet
Cook the vegetables until soft – I use the microwave but you can fry them if you prefer. Poach the cod in the microwave with a little bit of milk for 3-4 minutes then flake into small pieces. Add to the vegetables and then stir in the cream cheese until all mixed together then mix it all in with the couscous. Serve hot or cold. Can also be served with pasta or rice. I have also left out the fish before which was as popular and once I used salmon instead of cod but you can also use tinned tuna.
