Broccoli and Cheese Breadcrumb Bites 

I was rummaging through my kitchen the other day and thought I would have a go at making up something with food that was probably going to be wasted. I found some broccoli, some ends of a loaf of bread and some grated cheese that my son refused to eat (it wasn’t the right colour apparently!!) and wondered what would happen if I just simply mixed it all together with some egg. And the results were surprisingly tasty!! Little Lady had some for her lunch with some extra veg on the side and I froze the rest. So here are my very cleverly (!!) named 5 ingredient “Broccoli and Cheese Breadcrumb Bites” that are so easy to cook and perfect for your little one’s lunch, snack, dinner or lunchboxes. 

100g grated cheddar cheese

2 eggs

75g breadcrumbs

100g cooked fresh or frozen broccoli florets

1 tbsp plain flour

I cooked my broccoli florets in the microwave with some water for 6 minutes but you can also cook them in a pan of water on the stove for about 8-10 minutes. Chop them up really small when you have cooked them or blitz them in the food processor. Mix them with all other ingredients.

With wet hands take small bits of the mixture and form into patty shapes and put on a non stick baking liner (I love Delia Online Baking Sheet & Cake Tin Liners) or well greased tin foil.

Bake in the oven at 200 degrees C for about 20 minutes turning halfway.

When nice and golden on top and firm to the touch take out of the oven and let them cool a bit. You can serve these warm or cold. They freeze beautifully and can be defrosted either by leaving in the fridge overnight, on the side for a few hours or in the microwave.

  1. Hi, I always make patties with leftover veg. Add an egg like you, but instead of breadcrumbs, use crushed Weetabix. Works really well.

      • It’s quite hard as egg is the binding ingredient, but cooked red lentils can also bind, but will change the taste, but more nutrients aswell!
        Might be worth a try

  2. This is such a great and easy recipe! My son who is not a fan of veggies or cheese, loves these broccoli and cheese patties!
