3 Ingredient Fruit Scroll
I recently posted about my discovery of “2 Ingredient Dough” and how I made my “Easy Peasy Pizza Parcels” with it. I have been playing around with the dough and have made some more things so today I want to share with you the easiest Fruit Scroll ever. It’s only made with yoghurt, self raising flour and some fruit puree. Honestly how easy is that? Little Lady loved it and it is great for a dessert or a snack and freezes nicely too. Fantastic Fish Fingers
Let me just say at the outset that I buy processed frozen fish fingers. They are so convenient and 20 minutes in the oven and they are ready and, as both my kids love them, I’d be crazy not to buy them and make my life easy. But I also do make my own fish fingers (when I am feeling very Nigella-esque and virtuous) and they probably are as quick to make as the frozen ones. I hope you enjoy them! Continue reading
Turkey mozzarella meatballs
For today’s MyMiniMeals Mates Monday I am posting this fabulous recipe for delicious turkey mozzarella meatballs given to me by my sister Alex. These are so easy to make and taste amazing. They are great for adults and kids and you can make the meatballs any size you want depending how comfortable your children are with lumps. They are also great mashed down for babies who need softer food. Enjoy!
7 Days of Lunches – Part 3
Back by popular demand here is the 3rd instalment of me showing you what Little Lady eats for lunch in a typical week. I have a slight admission this week though. She has been quite poorly recently so her appetite has been (and still is) pretty rubbish but this is what I have offered her this week. It is a bit simpler than what I normally give her (as seen in “7 Days of Lunches” and “7 Days of Lunches Part 2” ) but as she hasn’t eaten much I have been trying to offer her things that I know she likes. You will also see that I have given her some frozen potato shapes (shock horror yes I do give my children processed food!) and a good old sandwich but honestly sometimes you just have to do the easy thing! I hope you find this as useful and enjoyable as Parts 1 and 2.

Easy Peasy Pizza Parcels
I scour the internet all the time for inspiration for recipes and I recently came across a method of making dough that is incredibly simple and only uses 2 ingredients! This method is ALL over the internet so I can’t even credit anyone for its invention but it is fantastic and I am excited to think of lots of ways to use it. For my first attempt using the dough I decided to make some easy to hold, easy to make and so easy to eat pizza parcels. The Boy loves pizza but always moans that he can’t hold it easily as the cheese and sauce get all over his hands so these “pizza parcels” are like mini calzones and encase the pizza filling inside yummy dough. They are perfect for an on the go snack as they are also delicious cold and you can add any filling in them at all. They are also egg free so great for those of you who are allergic. Simple Salmon Bites
I buy a lot of salmon and Little Lady eats it quite often. I usually make her Salmon with Broccoli and Cheese tomato sauce or Salmon and Broccoli Fishcakes but today I fancied making something that didn’t use flaked or mashed salmon. So I came up with these ever so easy, ever so tasty and ever so simple salmon bites. They only took me about 20 minutes from start to finish and were gobbled up by my little pink dustbin in no time.
