Cauliflower Cheese Biscuits

Those of you who know me well by now will know that Little Lady likes all things green whereas The Boy recoils in horror if I have the nerve to put anything green on his plate. Consequently I have become very adept at hiding all kinds of vegetables in his food but I find cauliflower is one of the easiest things to hide as it can easily pass for cheese or potato. Little does The Boy know but he eats ALOT of cauliflower!! He’s always ravenous after school and I wanted to make him something healthy for a snack and, as he loves cheese, I decided to see if I could make cheese biscuits with hidden cauliflower in them. And hey presto my “Cauliflower Cheese Biscuits” were born! They are incredibly simple to make and are perfect for a snack on the go. The Boy wolfed down 3 in the space of 5 minutes and declared them “yummy” which in my eyes is a huge success!!

75g grated strong cheese

75g cauliflower

150g plain flour

75g unsalted butter

1 egg

Cook the cauliflower until it is soft then mash into a smooth (ish) texture. Mix all the ingredients together with your hands until a ball of dough is formed.

Put the dough onto a floured surface and roll out until it is about 1cm thick.

Using biscuit cutters cut out pieces and then put onto a greased baking tray or non stick baking sheet.

Bake in the oven on 180 degrees C for 15 minutes turning half way or until the biscuits are turning golden.

These keep well for a few days in an airtight tin or tupperware box and also freeze really nicely wrapped in clingfilm. This recipe made 16 biscuits but my cutters are quite big so you can easily make more. Also you can play around with the quantities if you want to make more or less.

  1. I will give this a try, my 15 month old isn’t a veg fan. He loves your biscones so these should go down a treat.
