I use bananas a lot in my cooking as they are a great substitute for sugar. Both my kids (yes even The Boy!) love bananas so I buy tonnes of them.
Here are some of my favourite banana recipes and, as I have so many to choose from, watch this space for more!
Just a tip – bananas that have turned brown are the best ones to use so unless I state otherwise try to use them in that state.
Easy Sugar Free Rice Pudding (Cakes)
This recipe is great as not only is it sugar free but it can be used in two ways. A yummy and creamy rice pudding and easy to hold rice pudding cakes. We love them in the MMM house!
Banana “Ice Cream”
This “recipe” uses only 1 ingredient – bananas – to make the yummiest “ice cream”. As it only contains bananas it’s clearly dairy and sugar free so really great for those allergic to dairy and babies or children.
You can use as many bananas as you like for this. Place them peeled into a freezer bag and freeze them overnight. They should be completely solid. With a sharp knife chop the frozen bananas into small pieces (big pieces won’t blend easily at all) and put them in a food processor. Normally I try to avoid using any kind of blender or food processor but you have to use one in this recipe. Blend them on the highest power level for a couple of minutes. It will seem like they will never blend together and will make a dreadful noise at first when blending but soon you will see them start to form a creamy and smooth ice cream like texture. You can eat this immediately or put into a tub and keep in the freezer for a few days.
This is for all my friends with children allergic to eggs. It was a really popular post and this recipe in particular got great feedback. No-one in the MMM family is allergic to eggs but we still eat this often as it’s so tasty.
Banana puddding
I used to live in the USA and LOVED any kind of pudding. Pudding is a kind of thick custardy like dessert and comes in all types of flavours. You can buy it in a packet mix that you just add milk to but these packets are very high in sugar and lots of other processed things so I make my own and it’s really delicious.
250 ml Milk
1 Bananas
2 tbsp plain flour
Blend all the ingredients in a food processor until they are very smooth. Pour it into a saucepan and, over a medium heat, stir it for a few minutes. Turn the heat down and then stir constantly until it thickens. Once thick put into a bowl and leave to cool and then put in the fridge for a couple of hours. Yum!
This recipe was part of a post about super quick breakfasts as I had a lot of people asking me what can be made in a hurry. These pancakes are so easy to make and taste really delicious. You can also omit the raisins if you wish or substitute for other dried or fresh fruit.
