I have recently been introduced to the incredible concept of a mug cake. This is exactly what it says on the tin – a cake in a mug. They take only a few minutes to make and cook in a microwave and hey presto you have a really yummy and usually very naughty cake. The other day I was eating a particularly naughty one full of chocolate and loaded with sugar and The Boy wanted to try it. Unsurprisingly as it was full of chocolate he loved it. However I wouldn’t let him eat lots (partly due to it’s sugar content but mainly as I wanted to eat it all!) so I wondered if I could make a kiddy friendly version. I found a recipe online for a carrot cake in a mug but it had lots of sugar so I replaced the sugar with banana and the result (which clearly I had to try for scientific purposes only) was yummy. And because it’s sugar free it can actually be eaten at any time of the day and your kids will love the fact they can have cake for breakfast!!
1 small egg
2 tbsp mashed banana
2 tbsp finely shredded carrot
1 tbsp Greek or natural yogurt
3 tbsp plain or wholemeal flour
A tiny pinch of baking powder
Mix all the ingredients together in a regular sized mug until a smooth batter (with bits of carrot) is formed. Microwave for 2 minutes and check it is cooked in the middle. If it isn’t then cook for another 30 seconds then try again. Leave to cool for a few minutes (it will sink) and then either let your child eat straight from the mug or spoon it out.

I’ve added a pinch of cocoa powder and that has improved the flavour (no eggy taste). Alternatively a pinch of cinnamon will do the trick:)
