Meals for My Minis

I frequently get people asking me what my kids eat on a daily basis so in the past I have posted a few “7 Days of Lunches” posts which have been really popular. (7 Days of Lunches Part 1, Part 2, Part 3 and Part 4).

Here are a few photos and recipes of what my kids have been eating so far in January. I hope it gives you some ideas about what to feed yours. As usual everything I have given them is really quick and easy to make and (usually!) gets wolfed down.

Spinach, broccoli and cheese omelette with buttered toast and peas:

I make Little Lady a lot of eggs as they take no time at all and you can add all kinds of things to them. She particularly likes spinach and cheese omelettes which is a great way to get iron, calcium and protein into her all in one easy dish.

“Their very own Happy Meal”:

I have to admit that we do take our kids to McDonalds every now and then and they get a chicken nugget and chips Happy Meal. I thought I would try to make my own Happy Meal for them and honestly it was so easy and they wolfed it down.

Chicken Nuggets:

I bought some skinless chicken breasts which I cut into pieces then dipped them into some beaten egg and then some breadcrumbs. (I made my own breadcrumbs by simply putting a slice of wholemeal bread into my food processor and whizzing it up then I added some black pepper). I then baked them on a non stick baking liner for 15 minutes at 180 degreesC  turning halfway.

Homemade chips:

This was so simple. I peeled one baking potato and cut it into thin chip shapes then brushed them with olive oil and baked them on a non stick baking liner at 200 degrees C for 30 minutes turning halfway. You could add some seasoning if you wish but they tasted great without.

Sweet potato and carrot mash with tuna, broccoli, peas, sweetcorn and cheese:

Sweet potato makes a really yummy mash and is so easy to cook in the microwave. This is basically my Salmon and Broccoli Fishcakes recipe as the mash just with some added veg and cheese.

Tuna and cauliflower fishcakes with peas and sweetcorn:

These are essentially the same as my Tuna and Broccoli Fishcakes but instead of a sweet potato I used a regular baking potato and used cauliflower instead of broccoli.

Penne Pasta with hidden veg and lentil sauce and cheese:

This uses my Tomato and Vegetable Sauce but with some lentils added as in my 1 sauce 4 ways post.  The lentils just give some added protein as Little Lady isn’t that keen on grated cheese with her pasta whereas The Boy would happily have a whole block of cheese on his.

“Deconstructed fish pie” – mashed potato with poached cod, cheese, cauliflower and peas:

I make this a lot for the children as The Boy isn’t that fond of fish (except when its in breaded finger format!) but he loves this. Again it’s so easy as all I do is poach some cod then mash it into some mashed potato, add some cheese and mashed cauliflower. Little Lady loves peas but The Boy won’t touch them hence the two versions below. You really can add anything into this and I also use salmon or tuna.

Roast chicken with noodles and broccoli:

The Boy LOVES noodles so I buy the dried ones that only take 5 mins to cook on the hob. I have also recently persuaded him to eat broccoli so this dish is a firm favourite with both of the kids.

Mashed potato with spinach, carrots, peas and garlic and chive cream cheese:

Yet another mashed potato dish but this time with some flavoured cream cheese mixed in it with sone veg. Little Lady adores this and it’s a staple in her diet when she isn’t eating with The Boy (who wouldn’t touch something this green with a bargepole!).
