MMM Mates Monday – Easy Macaroni Cheese by Deborah

I love getting ideas from people about what they are making their children so I have decided to open up MyMiniMeals on a Monday for my lovely friends and followers to show everyone their recipes. I can’t promise to publish every recipe sent to me but will do my utmost best to post as many as I can. The only criteria is that the recipe is suitable for children and babies and ideally has no added sugar or salt. Apart from that the world is your oyster! I am very excited to see what lovely things you are all making your little ones.

To start things off my fab friend Deborah has kindly shared with me her recipe for her completely delicious and so easy to make Macaroni Cheese.

I am not very good at making cheese sauce but this is such a simple recipe and tastes yummy. Little Lady and Deborah’s youngest son are firm friends and they both enjoyed this last week for their lunch together so I asked Deborah to let me in on the recipe so here it is. I hope you enjoy is as much as they did!

50g butter

50g plain flour

1 pint of milk

100g grated cheese

Any kind of pasta – any shape or size works so just use whatever your child is able to eat.

Cook the pasta. Meanwhile in a saucepan melt the butter over a medium heat then add the flour and mix together continuously to form a roux (a thick paste like substance with no lumps). Then slowly add the milk whilst stirring continuously. Once it is thickened take the pan off the heat and add the cheese. Stir until the cheese is fully melted. Put the pasta in an oven proof dish then pour the cheese sauce over it.  Cook in the oven on 180 degrees C for about 20 mins until the top is nice and golden brown on top.

You can also add spinach or cauliflower to the cheese sauce and this can be easily made in little ramekins to make individual portions. Feel free to increase the quantities if you want – the only caveat is for the cheese sauce use equal weights of the cheese, flour and butter.
