I ran a series of posts entitled “7 Days of Lunches” (see below for more information) and they were incredibly popular. I haven’t done one for ages and I still get asked what my kids eat on a daily basis so here is an idea of what they have eaten over the last few days.
Bolognaise sauce with penne pasta
A firm favourite in my house with the mini MMM’s and Mr MMM. I make it with beef or turkey mince and make huge batches of it for the freezer. I serve it with pasta, couscous or rice.
Spaghetti with tuna, sweetcorn, cheese and mayonnaise
One of my favourite things to eat and now Little Lady adores the mix of tuna, sweetcorn and mayonnaise. I ran out of pasta this day so just cooked some spaghetti and broke it up.
Any mince beef burgers with steamed carrots, sliced cucumber and potato letters
My kids adore these burgers and I always have a huge stash of them in my freezer. These ones are beef but the recipe works beautifully with any mince (hence their name!) and my kids’ favourites are turkey burgers. And yes those potatoes are processed and straight from the freezer!
Roast chicken with gravy, roast potatoes, sweetcorn and cucumber
Totally yummy and so easy to make!! For this meal I cooked up some chicken pieces with some stock and seasoning in the oven for about 25 minutes then froze some of it in portions for the kids to have another day. The potatoes took 30 minutes and were so easy. I just peeled one jacket potato, cut it into small squares then put them in an oven tray with some olive oil and seasoning and baked until lovely and crispy.
This is an old photo as I forgot to take one but they had this last week and just love it. It is so quick and so tasty and also works brilliantly with Quorn chicken pieces or just veg.
Sweet potato mash with sweetcorn, peas, cheese and flaked salmon
Another old photo but this is pretty much a staple in my house when The Boy is out for a meal as Little Lady loves her veg and sweet potato so I make it when he is out as he won’t touch the stuff!

Hi, re your mince burger that you freeze, do you have to defrost them before heating them up? So, do you take them out the night before? THanks.
