My favourite fish dishes

My last post on Fish and Potato Soup was really popular and I received lots of comments from people about how they struggle to get their children to eat fish. I try to give my kids fish a couple times a week (admittedly I do count processed fish fingers as part of their fish intake but I do make my own fish fingers too) as it’s such a nutritious thing for them to eat. Here are my favourite fish dishes and even my picky boy will eat most of them.

Tuna

Tinned tuna is such a convenient thing to have in your store cupboard and I always have numerous tins as both my children like it. I only buy it in spring water or sunflower oil but if you can only get it in brine then just rinse it in a sieve first to remove as much salt as you can. These two recipes are really easy and yummy – one is a finger food and the other a nice, warming, comforting pie perfect for chilly days. It’s great for little ones too as can be pureed.

I also make tuna and cucumber sandwiches as The Boy loves them and I make a quick dish by cooking a potato in the microwave then mashing it with some tuna and cheese (and hidden veg if I am feeling brave!) and they both love it.

White Fish

I like using white fish as its easily hidden in things so if The Boy is having a fussy day he doesn’t know he’s eating fish and it has such a mild taste he actually does like it when he agrees to eat it. When I am using it for a recipe calling for flaked fish I buy frozen fillets of cod which are so easy to use as they take only a few minutes in the microwave to cook and flake really easily. For recipes using pieces of cod (like the fish fingers below) I buy skinless and boneless fresh cod.

Salmon

There is no doubt that I LOVE using salmon in my recipes even though The Boy won’t eat it unless it’s completely hidden by other stuff and mixed with ketchup. These two recipes are my favourite salmon dishes as they take no time to cook and are so versatile as the fishcakes can be served as a finger food or left as a mash and the sauce can be added to all kinds of grains / pulses / carbs.
