I love pancakes and I have found so many great ways to make them – sweet and savoury. So I thought I would show you some of my favourite pancake recipes that as usual are so easy and quick to make and only need a few ingredients. They can all be frozen so I tend to make a big batch of them, eat some – I mean my kids eat some!! – then freeze the rest. That way you only need to take a couple out at a time, let them defrost then just either heat them up in the microwave or frying pan or pop them in the toaster! Such a great idea for snacks or breakfast and the savoury ones make a lovely, easy dinner.
With all these recipes my method is the same so I have only listed the ingredients.
Method:
Mix all the ingredients together until a batter is formed then spoon dollops into a hot pan with some oil and fry on each side for a couple of minutes until golden.
I make these a lot as they are great for using up leftover veggies and, as Little Lady loves her veggies (unlike her big brother!), these are usually a safe bet for her.
Sweet Potato Pancakes:
I love making these pancakes as they are really filling due to the potato and come out bright orange which Little lady loves. You can also substitute the sweet potato for regular potato but they obviously won’t turn orange and also won’t taste as sweet but they still turn out great for a savoury pancake. I have also used half sweet and half regular potato before and this worked well too.
175g plain flour
1tsp baking powder
1/4tsp bicarb of soda
280ml buttermilk (OR 180ml plain yoghurt mixed with 80ml water)
1 medium egg
25 melted butter
200 mashed cooked sweet potato
Eggless Apple or Pear Pancakes
Here is one for my friends who have kids with an egg allergy. We don’t have any allergies in my house but these still feature a lot on our breakfast or snack menu. I just love the combination of cinnamon with apple or pear.
120g plain flour
1/4 tsp bicarb of soda
1 tsp cinnamon
120ml milk
2tbsp vegetable oil
1 tbsp water
1/2 tsp baking powder
1 apple or pear – peeled, cored and then either grated or chopped very finely
Banana and Raisin Pancakes and Fruit Puree Pancakes
I make these two recipes ALL the time as they are so easy and quick. They are great for using up old bananas or those pots or pouches of fruit puree that we all have laying around the house.
Yoghurt and Banana Pancakes:
Yoghurt in a pancake gives it a really lovely texture and creamy taste and these ones are completely yummy.
250g plain yoghurt
100g plain flour
1 banana mashed well
1 egg
1/2 tsp baking powder
