It’s getting colder which for me means I need a nice hot bowl of soup. I like to try to make the kids hot meals as often as I can and I love to make soup in the winter but as you can guess by now The Boy won’t eat anything that looks like it has a vegetable or anything remotely healthy in it so my soup options are limited. I have to also admit that at the moment Little Lady is not eating anything except sweetcorn and potatoes (I’m in denial that she is becoming a picky eater) so I am trying to think of ways to incorporate these two ingredients into everything I make! This fish and potato soup is really simple and as both of my kids do (usually) eat fish mixed in with mashed potato this isn’t too much of a deviation from that. You can use any fish you like and even the fish pie mix that you can buy in supermarkets works well here for a slightly stronger taste. It can be pureed too for little babies and when Little Lady was younger I used to add in some baby pasta or rice to it when she was starting to eat more lumps.
Me and Mr MMM loved it and I am not even going to talk about my kids’ reactions to it as quite frankly I’m over it and am burying my head in the sand!
1 large potato
Half an onion
1 clove garlic
15g unsalted butter
1 pint (550ml) milk
100g fillet of fish (white, smoked or salmon) – ideally skinless and boneless
Handful of frozen sweetcorn or peas
A few small florets of broccoli – fresh or frozen (fresh will take longer to cook)
A small handful of dried thyme and parsley.
Chop the onion and garlic finely and cook them in the butter until they are translucent. Add the herbs and the milk and bring the mixture to the boil, stirring constantly. Once it has boiled turn the heat down until it is simmering. Peel and chop the potato into small pieces then add to the milk mixture. Turn the heat up and let it boil again then turn heat down until it is simmering and cover. Leave to simmer for 20 minutes. Then add the broccoli and let it all simmer again for 3-5 minutes (or nearer 10 minutes if you are using fresh broccoli). Cut the fish into small pieces, making sure there are no bones in it, (if it has skin then de-skin it) and add to the mixture along with the peas and corn. Let it all simmer for another 5 minutes then serve. This can be served as is or you can puree it up for smaller babies or even mash it with a fork to make it a thicker consistency. I have also added some grated cheese before just to up the protein and dairy content. It freezes beautifully. You can add more seasoning like salt and pepper for adults or older children too.
