As today is MyMiniMeals Mates Monday I am yet again handing over to one of my fabulous MMM followers Lisa who sent me this great recipe for Simple Spinach and Goat’s Cheese Pasties. They are really delicious and so easy to make. Between you and me I am slightly worried that Lisa is now competition for my title as MMM Queen as this recipe fits all the criteria for how I like to cook – only a few ingredients, no added sugar or salt and terribly easy to make. They are perfect picnic food or for a packed lunch and can be served hot or cold. Thanks Lisa!!
1 sheet of ready made puff pastry (if frozen, defrosted at room temperature) – (who has time to make their own puff pastry!!)
1/2 log of goats cheese – roughly 50-75g
5 cubes of defrosted frozen spinach (squeeze the water out well) or a large handful of fresh spinach
2 eggs – (1 beaten for the egg wash)
Using a hand blender, mix the goat’s cheese, spinach and 1 of the eggs together and season with pepper. Using a sharp knife, cut the pastry into squares. Brush the edges with the beaten egg. Put a small teaspoon of the spinach mix into the middle of the pastry and fold over into a triangle. Pinch the edges to seal and brush the tops with the beaten egg. Cook in the oven on 200C/180C fan/gas 6 for about 20-25 mins depending on their size.
This recipe makes about 12 little pasties but you can make more or less depending how big you want to make them.

I have to admit, I froze mine after, not sure if I’m supposed to as the pastry was frozen but as it was cooked, I thought it’d be ok? Anyway, they froze well and my son still gobbles them up although I think they are nicer when fresh.
