Here is the long awaited (!!!) sequel to my post “Sugar Free Biscuits – Part 1” which, after many sleepless nights, I cleverly titled Sugar Free Biscuits – Part 2.
I love making biscuits for my children and they love having one as a pre bedtime treat or as a snack during the day. Obviously none of us really want our children loaded up on sugar just before bed so these are perfect as they are sugar free and easy to make.
I posted these ages ago but still get regular comments saying how much children (and adults) enjoy them and how people make them in batches to freeze. I know they are always a sure thing for Little Lady but my only issue is no matter how many I make her there are never enough leftover to freeze as they seem to end up in my mouth and I have seen Mr MMM secretly eating them too! Although The Boy likes each individual ingredient in these biscuits he deemed them “yucky” but so far is the only person I know of who doesn’t like them!
“Chocolate” Oaty Biscuits
The Boy loves chocolate – and when I say he loves chocolate he LOVES chocolate. He does have chocolate biscuits but I try to limit the amount he has and these seem to be a popular substitution for shop bought ones. They do contain a bit of honey so aren’t suitable for under 1’s but they are so easy to make and really delicious.
180g raw porridge oats
50 ml honey
3 tbsps cocoa powder
1 tsp vanilla essence
50 ml olive oil
2 eggs
2 tbsps raisins or other dried fruit (well chopped)
Mix all the ingredients together well until fully combined. Spoon small dollops of the mixture onto a well greased or non stick baking sheet / paper, making sure there is sufficient space between the dollops as the mixture spreads when it is being cooked. With the back of a spoon flatten them down a bit. Cook in the oven at 180 degrees C for 12-15 minutes until the tops are slightly firm and springy. These cookies are meant to be soft and chewy – not hard and able to be broken with a snap. Let them cool and enjoy!
Anyone who is a loyal MMM follower knows how easy and delicious these are and with only 2 ingredients (feel free to add more if you like) they couldn’t be simpler. I make a batch every couple of days and Little Lady eats them frequently for breakfast but I always have them in my bag for a quick snack for her. Although not strictly biscuits I couldn’t not remind you of their fabulousness!
These were so popular when I posted them a few weeks ago. Kids who refused to eat vegetables happily chomped on them – including The Boy. I have since added grated carrot and very finely chopped broccoli to them too and although met with a look of sheer horror from The Boy they are popular with the small lady in our house.
