It’s Monday so that means its My Mini Meals Mates Monday! Here is a great recipe for Sugar Free Peanut Butter Banana Muffins from my lovely friend Rachel. I love using bananas in things as they are great sugar replacement and these muffins combine bananas with the deliciousness of peanut butter. For totally sugar free muffins use sugar free peanut butter of which there are a few brands out there. You can make these in standard muffin size cases or in mini ones for bite size loveliness. Perfect for breakfast, snack or a bedtime treat as they won’t send your kids hyper as they have no sugar in them. Thanks Rachel!
125g plain flour
100g ground porridge oats (blitzed in a food processor) or Ready Brek
1 tsp baking powder
125g plain Greek or natural yoghurt
125g pureed apple
2 eggs
2 bananas (the browner the better)
2 teaspoons vanilla essence or flavouring
80g smooth peanut butter (sugar free preferable)
Mix the flour, oats and baking powder all the dry ingredients in a bowl. In a food processor mix the yoghurt, vanilla essence, pureed apple, eggs, bananas and peanut butter until it’s a smooth consistency. Add the mixture to the flour mixture and stir until it’s well combined. Spoon the mixture into well greased or non stick muffin tins. Cook in the oven on 180 degrees C for about 20-25 minutes until the tops are golden and springy.
Hi, can these be frozen too like the Tuna melt couscous muffins? (which by the way are yummy, I just hope my son will like them as much as I do 🙂 )
HI yes they freeze really well – glad you like the tuna ones!! 🙂
Hi, I found the mixture really really dry – I had to add loads of milk to get it to a dropping consistency. Should there be milk in the recipe or did I do something wrong??! many thanks! (I love the site by the way, use it several times a week!)
I found the same. Mine came out like rock cakes!
Hi
Can I use coconut yogurt instead as my son is on dairy free diet?
Thank youxxx
