I love the free recipe books in supermarkets and today I came across this fantastic recipe for a Sweet Potato and Orange Cake. As it has no added refined sugar and used sweet potato it immediately jumped out at me and I knew I had to make it. As usual I didn’t have all the ingredients so I improvised a bit. It was wolfed down by Mr MMM, Little Lady and me but as usual The Boy decided it wasn’t to his liking!
It’s perfect for your little ones’ desserts, snacks or lunchboxes and totally delicious for adults too (just in bigger slices!!).
I followed the method in the recipe above but halved the quantities of the ingredients and used slightly different ones.
350g sweet potatoes – peeled and cut into chunks
150g self-raising flour
1/2 tsp baking powder
125g currants
Finely grated zest of 1 orange plus a few squeezes of its juice
2 medium eggs beaten then a few tbsp taken out (to equate to 1.5 eggs in total in bowl) OR 1 large egg or 2 small eggs
80ml olive oil
50g clear honey
50g date nectar
Cook the potatoes in a pan of water until soft then drain, mash and leave to cool.
(Alternatively you can cook the potato in its skin in the microwave for about 8 minutes then scoop out the flesh, mash and leave to cool.)
I lined a round cake tin with baking paper and preheated the oven to 160 degrees C.
Mix the flour, baking powder and currants together.
Beat the eggs then add the zest, oil and honey/date nectar until well mixed. Add to the mashed potatoes and combine until thoroughly mixed.
Add this to the dry ingredients and mix well with a spoon.
Spoon into the cake tin.
I had some mixture left over so I also filled a few silicone muffin tins.
Bake for 45-55 minutes until the top is firm to touch.
Leave to completely cool in the tin before turning out, peeling paper off and slicing.

Oooo this looks great, I wonder if it would freeze well, I’m thinking yes as it looks quite dense and fruit cakey texture. LG’s school has a snack menu with cakes on a Monday so always looking for something that is nut free (classmates allergies!) and not too sickly! Will give this a try.
