One of my main aims for MyMiniMeals is to use as minimal set of ingredients as possible. Here are 10 of my favourite recipes starting with one with 1 ingredient then one with 2 ingredients and so on…….culminating in one with 10 ingredients. I hope you enjoy them and it goes to show that you really don’t need a long list of ingredients to make really delicious and nutritious meals.

Apple Three Ways
I always have lots of apples in the house as we all love them (yes even The Boy !) so I wanted to find some different ways of using them than just plain raw apple. I found these 3 great recipes online and as usual I have made my own alterations to them as they all contained sugar and I really prefer, wherever I can, to avoid giving the kids uneccessary sugar. Baby’s desserts

Lots of Breakfasts
I have a Facebook group about recipes for kids and am also a member of a very large parenting group. Without fail every day people ask for healthy and easy breakfast ideas for children. People are very nice and direct the poster to my site so I thought it would be useful to revisit some of my posts on breakfasts and show them all on one page. I have also shown you some recipe ideas that are perfect for breakfast. Everything is so yummy and takes hardly any time to prepare – just what we all want in the morning!

Pancakes galore
I love pancakes and I have found so many great ways to make them – sweet and savoury. So I thought I would show you some of my favourite pancake recipes that as usual are so easy and quick to make and only need a few ingredients. They can all be frozen so I tend to make a big batch of them, eat some – I mean my kids eat some!! – then freeze the rest. That way you only need to take a couple out at a time, let them defrost then just either heat them up in the microwave or frying pan or pop them in the toaster! Such a great idea for snacks or breakfast and the savoury ones make a lovely, easy dinner. Continue reading
Carrot and apple stars biscuits
I find the most successful recipes are usually the simplest ones. Todays MyMiniMeals Mates Monday recipe is from a lovely lady called Jude on my FB group who showed us all these delicious carrot and apple star biscuits and so far everyone who has made them has loved them. They are so easy to make and are great for a snack or dessert and freeze beautifully. They don’t contain any refined sugar but they do have some honey so aren’t suitable for under 1’s. You could remove the honey if you liked and I am sure they would be as yummy just not as sweet.
7 days of Breakfasts
I got such an overwhelmingly positive response to my 7 Days of Lunches post that I thought I would show you what Little Lady has for breakfast over a week too. It’s not as varied as her lunches admittedly but I do try to give her different things as much as I can. I always try to give her a carb and some fruit and if I can get some dairy into her breakfast then that’s a bonus too. I hope these 7 Days of Breakfasts inspire you! Continue reading
Any Mince Burgers
My burgers have always been like little rocks that could probably break your a bone if you dropped one on your foot! They were very tasty but way too hard. Then I went to my lovely friend’s house and her burgers were soft and moist and really delicious so she gave me her recipe. I have to admit (and I have told her this!) her recipe somehow didn’t work for me so I amended it slightly and now I am pro burger maker! Even The Boy – who is ultra fussy – eats these and declared them “yummy'”.
