It’s Monday and for MyMiniMeals Mates Monday my lovely friend Anna has given me her delicious and totally easy Meatloaf Muffin recipe. This is a bit like my Any Mince Burger recipe but they are a bit firmer and stick together really well from being made in a muffin case so are perfect for little fingers to pick up. Anna’s original recipe uses beef mince but you can try it with any mince you like or even mix minces. I hope you enjoy!

I buy a lot of salmon as Little Lady loves it and occasionally I can get The Boy to eat it (usually by hiding it in something else and dousing it in ketchup!). Let me just say at the outset that I buy processed frozen fish fingers. They are so convenient and 20 minutes in the oven and they are ready and, as both my kids love them, I’d be crazy not to buy them and make my life easy. I buy a lot of salmon and Little Lady eats it quite often. I usually make her Salmon with Broccoli and Cheese tomato sauce or Salmon and Broccoli Fishcakes but today I fancied making something that didn’t use flaked or mashed salmon. I love it when I make something and then think of other ways to use the same ingredients. I was tidying out my freezer the other day (as you do!) and found a bag of frozen butternut squash that had been lurking in the depths of my freezer. Little Lady loves butternut squash but I haven’t used it for a while so I decided to attempt to make her some risotto. You know me well enough by now to know that I have no patience in the kitchen so I wasn’t going to stand there stirring my rice for hours to get the perfect risotto so I came up with my own version that, as usual, is far easier to make than the proper one. I then decided to experiment with the cooked risotto and see what, if any, finger foods I could make from it. So here is the result of my experimenting – Easy Butternut Risotto 3 ways!
