I love looking back at my recipes and thinking of new things I can make. I get lots of people asking me for early weaning recipes and I admit, as my kids are way beyond that stage (and I did a lot of BLW style things for Little Lady), I am a bit out of practice wth purees. However I had lots of fun the other day making up two yummy puree recipes that are perfect for babies who are just starting or are established on protein. Courgette
Potato & Veggie Bake
Today is MyMiniMeals Mates Monday so here is a great recipe from my friend Lauren. It’s a really easy and extremely tasty potato and vegetable bake that can be eaten on its own or as a side dish. Lauren makes it in a big dish and then slices it up in portions to freeze. I tried it in muffin cases and it worked really well too so give both options a try. You can use the vegetables listed here or change it up a bit. I think parsnips or some other kind of root vegetable could also be used and you can try adding in some other vegetables to pack in the nutrients. You could even add some grated cheese into it and onto the top if you want to add in some protein and make it a really nutritious dish. Thanks Lauren!!
Ratatouille For Everyone
I get a lot of people asking what meals I can suggest that can be eaten by the whole family. One thing I love making for everyone in my house is ratatouille and I make it in 3 different textures to suit the varying palates in my house. For me and Mr. MMM I make it a bit spicy and very chunky. For Little Lady I make it with less seasoning and chopped finely. For The Boy (who as you know by now won’t touch anything that looks remotely like a vegetable) I puree it and he thinks its just pasta sauce! I also add in some chickpeas to bump up the protein content and serve it with rice, couscous, pasta, mash potato or at the moment I am loving courgette spaghetti! Courgette / Zucchini Muffin Loaf
I love online shopping and get a delivery of groceries once a week. This week I used a new company and made quite a large mistake when ordering courgettes (zucchini for all my non UK friends!). Instead of ordering 4 courgettes I ordered 4 bags of them and now have 16 courgettes to cook with! So I’m desperately trying to think of ways to use them all up. The Boy loves cucumber but he wasn’t fooled when I tried to pass off a courgette as a cucumber sadly. I then had a thought I could make some kind of savoury muffin using them. Continue reading
