Nuts about Peanut Butter

We are a peanut butter loving family. Smooth, crunchy, extra crunchy, in cakes, in snacks, on toast, in ice cream – you name it, we love it! Since having children I buy sugar free and preferably salt free peanut butter and it tastes just as nice as the sugar and salt loaded versions. Peanuts are a great source of protein so I’m more than happy to give my kids peanut butter as a snack and The Boy frequently has it on toast or with breadsticks as a bedtime snack. Cauliflower Cheese Biscuits

Those of you who know me well by now will know that Little Lady likes all things green whereas The Boy recoils in horror if I have the nerve to put anything green on his plate. Consequently I have become very adept at hiding all kinds of vegetables in his food but I find cauliflower is one of the easiest things to hide as it can easily pass for cheese or potato. Little does The Boy know but he eats ALOT of cauliflower!! He’s always ravenous after school and I wanted to make him something healthy for a snack and, as he loves cheese, I decided to see if I could make cheese biscuits with hidden cauliflower in them. And hey presto my “Cauliflower Cheese Biscuits” were born! They are incredibly simple to make and are perfect for a snack on the go. The Boy wolfed down 3 in the space of 5 minutes and declared them “yummy” which in my eyes is a huge success!! Continue reading

A few weeks ago I posted “7 Days of Lunches” which was an account of what Little Lady ate for lunch over a 7 day period . I received a huge amount of positive feedback and people seemed to be really interested in what she ate on a daily basis. Muffins Muffins Muffins

Savoury or sweet muffins are a great go-to snack or meal. I freeze them and can easily take as many as needed out and zap them in the micfrowave. They are also a really useful thing to take out with you and we frequently take them on day trips. Little Lady loves holding one on her way to pick up The Boy from school and I love finding new ways to make them and new ingredients to use. Sugar Free Biscuits – Part 1

I buy a lot of biscuits from the baby food aisle and both my kids love them but it’s always nicer (and cheaper!!) to make your own. The Boy loves helping me in the kitchen so I try where I can to involve him when I bake. As you have guessed by now I try to avoid giving the kids sugar wherever possible so here are 3 biscuit recipes that are baby, toddler, child and adult friendly and none of them have any refined sugar in them. The first one does have honey but it’s a small amount so it’s good for children over 1 but remember that under 1’s should not have honey. Easy Butternut Risotto 3 Ways

I love it when I make something and then think of other ways to use the same ingredients. I was tidying out my freezer the other day (as you do!) and found a bag of frozen butternut squash that had been lurking in the depths of my freezer. Little Lady loves butternut squash but I haven’t used it for a while so I decided to attempt to make her some risotto. You know me well enough by now to know that I have no patience in the kitchen so I wasn’t going to stand there stirring my rice for hours to get the perfect risotto so I came up with my own version that, as usual, is far easier to make than the proper one. I then decided to experiment with the cooked risotto and see what, if any, finger foods I could make from it. So here is the result of my experimenting – Easy Butternut Risotto 3 ways!

Courgette / Zucchini Muffin Loaf

I love online shopping and get a delivery of groceries once a week. This week I used a new company and made quite a large mistake when ordering courgettes (zucchini for all my non UK friends!). Instead of ordering 4 courgettes I ordered 4 bags of them and now have 16 courgettes to cook with! So I’m desperately trying to think of ways to use them all up. The Boy loves cucumber but he wasn’t fooled when I tried to pass off a courgette as a cucumber sadly. I then had a thought I could make some kind of savoury muffin using them. Continue reading

3 Easy Tuna Recipes

I love tinned tuna and luckily both my kids do too. It’s such an easy ingredient to work with as it’s already cooked and all you need to do is think of different ways to use it. I prefer to buy it in spring water rather than brine but if you can only get brine then I would try rinsing it off under some water first so it isn’t too salty. Also the one in sunflower oil is great for kids to add in a bit of fat for them.  My 3 Easy Tuna Recipes are really so simple and taste totally delicious. In fact Mr My Mini Meals keeps asking me to make them for his dinner as he likes them so much. I hope you enjoy them as much as all the My Mini Meals family do! Continue reading

7 days of Breakfasts

I got such an overwhelmingly positive response to my 7 Days of Lunches post that I thought I would show you what Little Lady has for breakfast over a week too. It’s not as varied as her lunches admittedly but I do try to give her different things as much as I can. 7 days of lunches

Since starting this blog people are constantly asking me what I feed my kids. They presume that I never give them anything processed and that every meal is full of couscous, quinoa and vegetables! I tell them they are very much mistaken and my kids, like most others, happily chomp on fish fingers, oven chips, ready made pizzas and peanut butter sandwiches. However I do try to limit the amount of processed food they eat and ensure that the majority of their food is home cooked.  Continue reading
