It’s Monday so that means its My Mini Meals Mates Monday! Here is a great recipe for Sugar Free Peanut Butter Banana Muffins from my lovely friend Rachel. I love using bananas in things as they are great sugar replacement and these muffins combine bananas with the deliciousness of peanut butter. For totally sugar free muffins use sugar free peanut butter of which there are a few brands out there. You can make these in standard muffin size cases or in mini ones for bite size loveliness. Perfect for breakfast, snack or a bedtime treat as they won’t send your kids hyper as they have no sugar in them. Thanks Rachel!

Gingerbread Biscuits
Little Lady and The Boy both love gingerbread biscuits made by a certain baby / child food company and I buy lots of bags and boxes of them. I’m currently attempting to try to save money wherever I can and realised that these biscuits (and similar snacks) are actually quite pricey so I wanted to try to make my own equivalent biscuits. These little smiley guys and gals are sugar free and took only 15 minutes from start to finish to make and both kids wolfed them down! I did plan to make them in more fun shapes than I did but my fabulous shaped cookie cutters haven’t arrived yet from Japan so I just used a little round cookie cutter today. You can make them in any shape or size you want but as my kids like the little round bagged biscuits I tried to emulate them as closely as I could. I hope you enjoy them as much as we all have!
Pancakes galore
I love pancakes and I have found so many great ways to make them – sweet and savoury. So I thought I would show you some of my favourite pancake recipes that as usual are so easy and quick to make and only need a few ingredients. They can all be frozen so I tend to make a big batch of them, eat some – I mean my kids eat some!! – then freeze the rest. That way you only need to take a couple out at a time, let them defrost then just either heat them up in the microwave or frying pan or pop them in the toaster! Such a great idea for snacks or breakfast and the savoury ones make a lovely, easy dinner. Continue reading
Easy Bake Bagels
I am still obsessing over my discovery of “2 Ingredient Dough” which I used in my Easy Peasy Pizza Parcels and 3 Ingredient Fruit Scroll recipes. I have been experimenting lots with it and today I have been making bagels. My household is a bagel loving one and we buy them every week and have them for lunch most weekends. But they aren’t cheap and most contain a lot of salt so I tried to make my own and, with 2 Ingredient dough, they couldn’t have been easier. And the bonus is that they taste totally yummy! I made a few versions – plain, cheese and onion (Mr MMM favourite type of bagel) and they all worked so well so have a go and let me know what you think!
Carrot and apple stars biscuits
I find the most successful recipes are usually the simplest ones. Todays MyMiniMeals Mates Monday recipe is from a lovely lady called Jude on my FB group who showed us all these delicious carrot and apple star biscuits and so far everyone who has made them has loved them. They are so easy to make and are great for a snack or dessert and freeze beautifully. They don’t contain any refined sugar but they do have some honey so aren’t suitable for under 1’s. You could remove the honey if you liked and I am sure they would be as yummy just not as sweet.
3 Ingredient Fruit Scroll
I recently posted about my discovery of “2 Ingredient Dough” and how I made my “Easy Peasy Pizza Parcels” with it. I have been playing around with the dough and have made some more things so today I want to share with you the easiest Fruit Scroll ever. It’s only made with yoghurt, self raising flour and some fruit puree. Honestly how easy is that? Little Lady loved it and it is great for a dessert or a snack and freezes nicely too. Easy Peasy Pizza Parcels
I scour the internet all the time for inspiration for recipes and I recently came across a method of making dough that is incredibly simple and only uses 2 ingredients! This method is ALL over the internet so I can’t even credit anyone for its invention but it is fantastic and I am excited to think of lots of ways to use it. For my first attempt using the dough I decided to make some easy to hold, easy to make and so easy to eat pizza parcels. The Boy loves pizza but always moans that he can’t hold it easily as the cheese and sauce get all over his hands so these “pizza parcels” are like mini calzones and encase the pizza filling inside yummy dough. They are perfect for an on the go snack as they are also delicious cold and you can add any filling in them at all. They are also egg free so great for those of you who are allergic.
