I am wheat free so use quinoa a lot in my own cooking but I thought it would be interesting to see what I could use quinoa for when making my kids’ meals. I came across this recipe online but as usual I made my own amendments to it as I didn’t have all the ingredients in my kitchen! They came out so well and Little Lady wolfed them down. You can change the vegetables depending on what you have in your house so if you do let me know how they turn out!

Spinach and Cheese Scones
I love making scones as they are a) incredibly easy to make b) pretty fool proof and c) you can really add in anything (sweet or savoury) to them and they generally turn out ok. Little Lady is currently going through a phase where she weirdly likes food that is green so I am trying to add in some element of “greenness” to her food. These Spinach and Cheese Scones are so easy to make and tick all the criteria that my 2.5y old Princess requires for an easy snack or meal. They are a bit green, easy to hold and taste yummy and for my criteria they are full of iron and calcium, take hardly any effort to make and freeze beautifully. Lazy lunches
The last couple of weeks in the MMM household have been a bit manic as our house is being redecorated and I have also been away so I haven’t been able to be in the kitchen as much as I would like. Consequently I have had to make very quick lunches for Little Lady while dodging builders and packing for my holiday. As you all know I live in the real world and believe everything is fine in moderation so have been using some processed food for her lunches but I have balanced it out with plenty of fruit and veg. I also have had lots of fun using my fab new plates which actually I have noticed have made a huge difference to both my kids’ enthusaism when eating. I buy a lot of salmon as Little Lady loves it and occasionally I can get The Boy to eat it (usually by hiding it in something else and dousing it in ketchup!). As today is MyMiniMeals Mates Monday I am yet again handing over to one of my fabulous MMM followers Lisa who sent me this great recipe for Simple Spinach and Goat’s Cheese Pasties. They are really delicious and so easy to make. Between you and me I am slightly worried that Lisa is now competition for my title as MMM Queen as this recipe fits all the criteria for how I like to cook – only a few ingredients, no added sugar or salt and terribly easy to make. 7 Days of Lunches – Part 3
Back by popular demand here is the 3rd instalment of me showing you what Little Lady eats for lunch in a typical week. I have a slight admission this week though. She has been quite poorly recently so her appetite has been (and still is) pretty rubbish but this is what I have offered her this week. It is a bit simpler than what I normally give her (as seen in “7 Days of Lunches” and “7 Days of Lunches Part 2” ) but as she hasn’t eaten much I have been trying to offer her things that I know she likes. You will also see that I have given her some frozen potato shapes (shock horror yes I do give my children processed food!) and a good old sandwich but honestly sometimes you just have to do the easy thing! I hope you find this as useful and enjoyable as Parts 1 and 2.
Spinach and Cheese Polenta Fingers
There are certain ingredients that just seem scary to use and polenta is definitely one of them. Whenever I see it on cookery programmes I always say I am going to make some but to be honest I have had a box of it sitting in my cupboard for a while and just haven’t got round to using it. I was cleaning out the cupboard the other day and found it so thought I would give it a go and see what I could make.
