1 sauce – 4 ways

As a busy mum of two I always like to find easy ways of preparing quick meals for them. I have to admit they do consume their fair share of fish fingers and oven chips but I do really try, when I have time, to give them homemade stuff. I love it when I find one recipe that I can use in lots of ways and this is exactly what I do with my Tomato and Vegetable Sauce (I’m going to call it TVS in this post for ease). I make batches and batches of this sauce and freeze it in portions or weaning trays. It’s then just a matter of popping some into the microwave or in a fridge to defrost then using it as I wish. It also means I can get some vegetables into The Boy who, as you know by now, is a vegetable hater. Here are some ideas of how I use it in my cooking but I’m sure there are lots more so let me know what you come up with!

My favourite fish dishes

My last post on Fish and Potato Soup was really popular and I received lots of comments from people about how they struggle to get their children to eat fish. I try to give my kids fish a couple times a week (admittedly I do count processed fish fingers as part of their fish intake but I do make my own fish fingers too) as it’s such a nutritious thing for them to eat. Here are my favourite fish dishes and even my picky boy will eat most of them.

7 Days Of Lunches Part 4

Following on from the success of my previous 7 Days of Lunches Part 1, Part 2 and Part 3” I give you – “7 Days of Lunches Part 4”!!. It’s been the summer holidays for the last 6 weeks so I have had The Boy at home a lot with me at lunchtime so what I am showing you are meals I have given both of the kids for half of the week and just Little Lady the other half (when The Boy has been at camp running around like a lunatic and eating far too much chocolate!). Also Little Lady has been teething so I have been giving her quite a lot of soft food as she really isn’t that interested in eating. But I realised these softer, mushier meals are prefect for those babies who are early on in the weaning process so I hope you find them interesting and useful for your very little ones.

Muffins Muffins Muffins

Savoury or sweet muffins are a great go-to snack or meal. I freeze them and can easily take as many as needed out and zap them in the micfrowave. They are also a really useful thing to take out with you and we frequently take them on day trips. Little Lady loves holding one on her way to pick up The Boy from school and I love finding new ways to make them and new ingredients to use. Here are my current 3 favourite muffin recipes but watch this space as I am constantly trying new ones!

3 Easy Tuna Recipes

I love tinned tuna and luckily both my kids do too. It’s such an easy ingredient to work with as it’s already cooked and all you need to do is think of different ways to use it. I prefer to buy it in spring water rather than brine but if you can only get brine then I would try rinsing it off under some water first so it isn’t too salty. Also the one in sunflower oil is great for kids to add in a bit of fat for them.  My 3 Easy Tuna Recipes are really so simple and taste totally delicious. In fact Mr My Mini Meals keeps asking me to make them for his dinner as he likes them so much. I hope you enjoy them as much as all the My Mini Meals family do! Continue reading

7 days of lunches

Since starting this blog people are constantly asking me what I feed my kids. They presume that I never give them anything processed and that every meal is full of couscous, quinoa and vegetables! I tell them they are very much mistaken and my kids, like most others, happily chomp on fish fingers, oven chips, ready made pizzas and peanut butter sandwiches. However I do try to limit the amount of processed food they eat and ensure that the majority of their food is home cooked.  Continue reading
