For today’s MyMiniMeals Mates Monday I am posting this fabulous recipe for delicious turkey mozzarella meatballs given to me by my sister Alex. These are so easy to make and taste amazing. They are great for adults and kids and you can make the meatballs any size you want depending how comfortable your children are with lumps. They are also great mashed down for babies who need softer food. Enjoy!
500g turkey mince
Half a mozzarella ball
1tbsp paprika
1tbsp mixed herbs
2 cloves garlic crushed
Few grinds of black pepper
I tbsp oil
Preheat oven to 180 degrees C / 350 degrees F.
Mix the mince with the garlic, paprika, herbs and black pepper. Use your hands to mix through thoroughly. Make 16-20 meatballs (walnut sized). Cut mozzarella into 16-20 equal (ish) pieces. Take a meatball and push the mozzarella into the centre with your thumb. Seal the mince around the mozzarella and reshape into a ball. Repeat.
Grease a baking tray with oil or use a non stick baking sheet and place the balls on it in one layer. Bake for 15-20 minutes.
These are great on their own or with some tomato sauce and pasta or rice.
